CO125. MILK MODIFIED WITH SUNFLOWER OIL, SELENIUM AND VITAMIN E IN DIET OF COWS CAN INFLUENCE IN THE NUTRITION STATE OF ELDERLY

Background: The project aimed to study the effects of inclusion of sunflower oil, vitamin E and selenium in the diet of dairy cows on milk composition and the influence of this modified milk in the nutrition state and health of elderly. Methods: 100elderly people living in the permanence institution received 4different kinds of milk produced according to four different diets of dairy cows. The four treatments of milk consumed for elderly in 12weeks were changed according to diet of the dairy cows: control diet; control diet plus selenium and vitamin E; sunflower oil diet; sunflower oil diet plus selenium and vitamin E. Elderly were separated in 4groups according to each diet supplemented for the dairy cows. The selection of the elderly for each group was composed disease, gender, smoked and cognition. Analysis of biochemical profile, body composition by bioimpedance and food intake was measured before and after of milk modified. Results:81 volunteers were selected, with 78±9.9years old and 53% female. Anthropometrically was not significantly different between the groups (BMI, body fat, free fat mass and phase angle). Fatty acid profile was measured after and before supplementation, the group that received the milk of cow with selenium, vitamin E and sunflower oil reduced 9% total cholesterol and 16% LDL-cholesterol and significantly different of control diet. The group that received the milk with intake sunflower oil reduce 6% of total cholesterol and LDL-cholesterol and significantly different of control diet. Intake of fat was measured 34% and 28% of calorie, respectably by methods 24-recall and direct-weight. Conclusions: State nutrition didn’t alter in twelve week, but the groups of elderly which received the milk of dairy cows supplemented in the diet with sunflower oil in its diet had difference in the cholesterol profile in the serum blood when compared with control diet before supplementation.
